Peking Duck Cooking Instructions
- Defrost: Refrigerate uncovered, breast side up, 24 hrs.
- Roast: Cook at 425°F for 30 min. Lower to 350°F and roast 50-60 min., until golden, and 180-190°F inside.
- Serve: Rest 5-10 min. Carve and enjoy with bao buns, hoisin, cucumber & scallions.

SERVING TIP: Carving the Peking duck
- Remove the leg and wing.
- Carve the duck breast into thin slices leaving skin attached.
- Pull/shred the meat from legs and wings.
