Instructions:

  • Prepare the Duck Breasts:
    • Score the skin of the duck breasts in a cross-hatch pattern, being careful not to cut into the meat.
    • Season both sides of the duck breasts with salt and pepper.
  • Cook the Duck Breasts:
    • Heat olive oil in a skillet or frying pan over medium-high heat.
    • Once the pan is hot, add the duck breasts, skin side down. Cook for about 4-5 minutes until the skin is crispy and golden brown.
    • Flip the duck breasts and cook for an additional 2-3 minutes for medium-rare doneness or adjust the cooking time to your desired level of doneness.
    • Remove the duck breasts from the pan and let them rest for a few minutes before slicing.
  • Make the Zesty Slaw:
    • In a bowl, combine shredded cabbage, shredded carrots, chopped cilantro, and thinly sliced jalapeño pepper.
    • In a separate small bowl, whisk together lime juice, honey, salt, and pepper. Pour the dressing over the slaw mixture and toss until everything is well coated. Adjust seasoning to taste.
  • Prepare the Chipotle Crema:
    • In a small bowl, mix together the sour cream, adobo sauce, lime juice, and a pinch of salt. Adjust the adobo sauce to your desired level of spiciness.
  • Warm the Tortillas:
    • Heat the tortillas in a dry skillet over medium heat or on a grill for a minute or two until they are soft and pliable.
  • Assemble the Duck Tacos:
    • Thinly slice the rested duck breasts.
    • Lay out the warm tortillas on a serving plate.
    • Place a few slices of duck on each tortilla.
    • Top the duck with the zesty slaw and drizzle with chipotle crema.
    • Add optional garnishes like sliced avocado, sliced radishes, or crumbled queso fresco.
  • Serve:
    • Serve the delicious Duck Tacos immediately with your choice of side dishes or enjoy them as they are.
