Chef Shawn Doyle: Savory Grille
Chef Shawn Doyle began his restaurant career at age 12, washing dishes in his uncle’s Bethlehem, PA restaurant. In 1997, Chef Shawn, along with his wife, Dorothy, founded the Savory Grille in the carriage house of the historic Seisholtzville Hotel. The restaurant has a well-earned reputation as a premier dining establishment in Pennsylvania’s Lehigh Valley. Chef Shawn prides himself on serving French, African, Asian and Mediterranean cuisine, using the freshest and finest ingredients sourced from nearby farms.
Chef Shawn says, “Pan-seared Jurgielewicz Duck Breast is a favorite menu item, accompanied by Duck Leg Confit. We use only Jurgielewicz duck for our menu. The Jurgielewicz duck has incredible flavor, tracing its breeding back to its Long Island heritage. The duck texture is firm, more like steak, not mushy like other duck we have tried. We have visited the Jurgielewicz farm and are impressed by the humane duck care given the flocks by Dr. Joe, a veterinarian, and his professional staff.” Savory Grille is open Wednesday through Sundays.
